Gin from the wild nature of Bornholm
The formerly and well-known sommelier and owner of Æblehaven in Snogebæk, is now betting on top-class spirits. If you know about gin, then you know that the main ingredient is juniper, and two weeks in October you can join Henrik Nerst while he is collecting the juniper in Ravnedalen, on the Northern part of Bornholm.
Henrik observed in his former restaurant and many wine journeys, that everybody wants a gin and tonic after dinner. With the restaurant sold and his better half alias the head chef going to a smaller venue, a distillery was purchased in December 2018, and the trained sense of taste started trying different gin-variants off.
A proud Henrik Nerst was in 2019 able to launch the two gin series Wild and Ene, which was the beginning of his dream turned into an authentic micro-distillery that produces high-class gin and vodka.
