Organic apple orchard for producing wild-fermented cider.

At Pilegård, Johan, Otto, Oskar, Emil, and Peter live and work. In September 2019, we took the leap and moved to northern Bornholm with the dream of establishing an organic apple orchard and making wild-fermented cider.

The old four-winged farm previously belonged to an engaged permaculturist, who, with a passion for nature, ensured high soil quality and amazing biodiversity—a true paradise! However, the farmhouse and barn buildings needed some tender care, so as soon as the first 3,000 apple trees were planted, we began the extensive work of restoring the old family farm.

We’re not finished yet, but with a large and continually growing organic apple orchard and a newly refurbished cider house, we are ready to open the barn doors and welcome visitors to our farm shop for a glass of cider in the sun or a guided tour of the orchard.

At Pilegård, we want to show what cider can be. That’s why we don’t limit ourselves with rigid rules about how cider should be made or how it should taste. Our orchard primarily consists of so-called cider apple trees—varieties cultivated in southern England and northern France for cider production, but which have little tradition of use in Denmark. Excellent cider can also be made from Danish dessert apples, so we use both cider apples and dessert apples, orchard apples and garden apples, tart apples, sweet apples, bitter apples—and even pears!

Our fruit is always handpicked and carefully selected, and we wild-ferment all our ciders at Pilegård. Here, we continue experimenting with new fruits, methods, and flavors. The result is a wide range of diverse ciders, from sweet to dry, and we’re sure to have at least one that’s perfect for you.
